Description

This recipe is great for cold days when you want to warm up from the inside out.

2lb extra lean ground beef
3 cans tomato paste
2 cans diced tomatoes
1 can plum tomatoes (peeled)
1 can red kidney beans
1 can white lima beans
1 habanero pepper
1tsp salt
1tsp ground black pepper
2 white/yellow onions
1 green bell pepper
1 red bell pepper
1tbsp olive oil
3 bay leaves
3 garlic cloves
1tsp cayenne pepper
1tsp oregano

Preparation

- finely dice 1 onion
- Using a large skillet, combine onion, ground beef, garlic - heat at medium/high until just browned

- coursely chop remaining onion
- finely chop habanero chili pepper
- add canned tomatoes, onion, ground beef and onion/garlic from skillet, bay leaves, oil, spices, and habanero pepper to large pot
- bring to a boil, reduce heat and simmer for 3-4 hours. Task occasionally and adjust spice to taste
- once flavour is strong (hard to quantify, it just has to be right) and balanced, add peppers and beans
- cook for one more hour on low (simmer)

- Serve!!!
