Caramelized Peaches with Fresh Ricotta, Honey & Pepper
Description
These caramelized peaches are very soft and velvety with a subtle taste of cinnamon and clove. They can be either grilled or baked in an oven. If you use peaches that are not completely ready, still a little bit sour, it will give a nice contrast to sweet honey & pepper sauce on a creamy fresh ricotta.

2 peaches
8 cloves
3 cm cinnamon stick, broken into smaller pieces
1-2 teaspoons butter
2 tablespoons Brown Sugar
4 tablespoons fresh ricotta cheese
2 tablespoons honey
6-8 black peppercorns, crushed
1/2 teaspoon cinnamon powder
Preparation
1. Preheat the oven to 220-230 C degrees. Halve the peaches and remove pits. Pierce each half with 2 cloves and a small piece of cinnamon. Put a little bit of butter and a teaspoon of brown sugar on each half and bake them in the preheated oven for 5-8 minutes or until the peaches are soft. The time will depend on how ripe the peaches are.
2. After the peaches are done, carefully remove the cloves and cinnamon sticks using a fork.
3. Add about a half of teaspoon of cinnamon powder to ricotta and mix it well. Top each half with a heaped tablespoon of ricotta, drizzle with honey and sprinkle with freshly crushed pepper.
Serve it warm. Enjoy!
