Caribbean Chicken
Description
Here's an inventive take on jerk chicken. The Pick-a-peppa sauce gives it some spice, while the pineapple gives it some sweetness. Top it with some Monterrey jack cheese, for a little creaminess as well. You could even make this into a sandwich!

4-6 boneless skinless chicken breasts, trimmed of fat
1 can sliced pineapples
1 pkg sliced Monterey Jack cheese slices (optional)
Caribbean/Jamaican seasoning
Pick-a-peppa sauce
Preparation
Sprinkle chicken breasts with seasoning and then cover with Pick-a-peppa sauce. Refrigerate for at least one hour (covered).
Best cooked on barbecue grill....but you could also bake them. Grill pineapples on both sides, set aside. Grill chicken until cooked through, then top with slice of pineapple and slice of cheese and heat until melted.
We love this in the summer, serve with corn cobs roasted on the grill, white or brown rice, or roasted potatoes.

I had somehow accrued a jar of pick-a-peppa and didn't know what to do with it - this is perfect. Love the sweet contrast from the pineapple. I dig!
I wish that you would post the nuber of calories per seving with the recipes! Any chace of this happening in the furure???
