Cheese Tortellini with Mushroom Sauce

Tortellini is great pasta to use for weeknight meals. It is super fast to make and can be paired with a number of sauces, vegetables, and proteins. I happen to love mushrooms, so this is one of my favorite ways to prepare tortellini. Serve this simple recipe with a fresh salad and some crusty bread. Yum!

1 package of cheese tortellini
2 teaspoons olive oil
8 ounces of fresh Shiitake mushrooms, stemmed and thinly sliced
2 garlic cloves, sliced
3 tablespoons grated Parmesan cheese
1 tablespoon cold butter
1/3 cup fresh parsley, chopped
1 cup water
Salt and pepper to taste

Preparation

In a large pot, boil your water for your tortellini. Make sure to salt the water well. Cook according to your package directions. Drain and set aside.

In a large skillet, heat your oil over medium/low heat. Add your mushrooms, and garlic. Cook for about 7 minutes, stirring frequently. Add water, and salt and pepper. Cook liquid and reduce by half (about 5 minutes). Remove from heat, toss in tortellini, cheese, butter and parsley. Mix well and serve.

This looks really good. Can you substitute other types of mushrooms for the sauce?

I have never tried it, but you could probably use Crimini or Porcini mushrooms. Button mushrooms wouldn't really add much flavor, but you could try those as well.
