Chicken ala Terri
Description
When I was a teenager, I had a back issue that kept me down for 8 months. I watch a lot of TV. Merv Griffen had a show back then and had celebrity guests on. One was Sophia Loren whose pasta sauce recipe I copied. This chicken casserole dish came from my time on my back. I just don't remember if Merv Griffen's show is responsible!

1 lb chicken tenderloins, cubed
1 16 oz. sour cream
1 pkg. Lipton's Onion Soup Mix
1 pkg. Stove Top Stuffing
1/2 cup chopped onion
1/2 cup chopped celery
1/2 stick butter or margerine
Preparation
Boil cubed chicken until done. Drain and reserve the water.
Mix the chicken, sour cream and soup mix in a large bowl. Spray a casserole dish with cooking spray. Put chicken mixture into casserole dish and set aside.
While the chicken boils, saute the onion and celery in the 1/2 stick of butter.
Prepare the Stove Top according to package directions. Remove from heat and gently stir in sauteed onions and celery.
Spread the finished stuffing loosely over the chicken mixture. Bake at 350 degrees Fahrenheit until bubbly. If casserole dish is shallow, keep covered so it will not dry out. If it is deeper, it does not need to be covered. I usually bake it for about 30 minutes.
