Chicken and Broccoli Cheese Rice

My boyfriend would eat this everyday if I would let him. It doesn't take much time and makes a ton, so it is great for leftovers as well. I use fresh broccoli but you could use frozen broccoli to save time. This will definitely become one of your famiy's favorites. Even kids will love it.

3 boneless, skinless chicken breasts
1 can cream of chicken soup
½ package of Velveeta processed cheese
2 large heads of fresh broccoli
2 cups chicken broth
3 ½ cups instant white rice
1 cup water
Salt and pepper to taste

Preparation

Start by cutting your chicken breasts into small cubes. Make sure all the pieces are about the same in size. Trim off any fat pieces and discard. Salt and pepper all pieces generously.

In a large non-stick skillet, heat a small amount of olive or vegetable oil (just enough to cover the bottom of the pan) on medium. Once the pan is hot, place the chicken in the pan and separate the chunks. While the chicken cooks, you can prepare your other ingredients. Chop your broccoli into small bite size pieces and set aside. Make sure to stir the chicken every few minutes. You want the chicken to be fully cooked through and brown a little, but you do not want it to burn.

Now you can dice your processed cheese into small pieces as well. Once your chicken is fully cooked ( there should be no pink in the center of each piece and juices should be clear), then you can add your broccoli into the pan. Let the broccoli sweat for just a minute. Make sure to stir a few times. Next you can add your cheese and stir everything together. Turn your heat down to medium low.

As the cheese starts to melt you can add your cream of chicken soup. Stir the ingredients until everything starts to melt together. Once the cheese is pretty much combined with the soup you can add your chicken broth and water. Salt and pepper to taste. Mix all the ingredients well and turn the heat up to medium again. Once the liquid comes to a boil you can add your rice. Stir the rice in and mix well until all grains are fully immersed in the broth. Immediately remove the pan from the heat and cover with a lid.

Let it sit for 7 minutes, or time according to rice package. Do not open the lid or stir during this time. After the time has elapsed, open the lid and stir everything one last time. Now you are ready to serve.
