Chicken Fried Rice

After living in Hawaii for several years, I became quite adept at all the favorites of the Islands. This recipe is as easy as making a sandwich. Very filling even by itself

4 c Steamed white rice
1/2 c diced onions
1/2c frozen peas & carrots or corn
1/4 soy sauce (lite for less sodium)
1/2 grilled chicken cubes
2 lg fresh eggs
1 bun diced green onions
Salt & Pepper
Preparation
Cut bonless chicken filets into cubes and grill at high heat in olive oil. Season with salt & papper Once thoroughly cooked, put aside.
In the same pan, put generous amount of oil (just to coat the bottom of pan) and heat. Crack eggs into pan and scramble fast.
Once eggs are cooked, add rice: heat and mix with eggs. Add onions and vegetables. Mix thoroughly to combine all ingredients. Watch your heat. Add chicken to mixture and combine. Pour soy sauce over mixture and mix. This will turn your white rice brown.
You are ready. Garnish with diced green onions. Enjoy with any grilled meat or even by itself
