Chicken in Orange Sauce
Description
Quick and easy chicken dish for one for nights when there are minimal ingredients on hand. Delightful citrusy summer fare, or a bright spot in the middle of winter when you wish summer would get here already!

1 boneless skinless chicken breast
2 T Olive Oil
1/2 Shallot, finely chopped (Can substitute 1 T onion)
1/4 c white wine
1/4 c ORANGE JUICE
*1 Pinch Tarragon (or Marjoram)
Preparation
1. Prepare the chicken breast by slicing it half horizontally. Cover the halves with plastic wrap (or don’t, really up to you) and pound them out to 1/4 inch thickness. You do not need a meat mallet for this. I used a small sauce pan gripping it from the sides and pounding down. Lightly salt and pepper both sides and set aside.
2. Get your skillet good and hot. Once a bead of water skips away on the surface, add 1 T oil and coat pan. When oil is aromatic (as in you can actually smell it), add the chicken breasts keeping the heat on medium. While breasts are cooking (if you haven’t already) mince the shallot. Breasts are ready to be flipped when they no longer stick to the pan and have developed a golden crust. This applies to the other side as well. When chicken is finished remove from pan to plate.
3. Add remaining T of to pan and once fragrant add shallots and saute until translucent. Add White wine and allow to reduce to about 1/3 the original amount scrapping up brown bits on the bottom of the pan as you go. Add orange juice and pinch of tarragon or marjoram and allow to reduce by half. Return chicken breasts to pan along with any drippings from plate for about a minute. Serve breasts with remaining sauce from pan.
*Optional. Heed the amount though. A pinch goes a very long way.

You know, I have never thought about chicken, orange juice and white wine in a recipe before. All I need is some wine. I bake chicken a lot. This looks very good.
