This is a delicious chicken dish with a lemony sauce. It's quick, easy and delicious! This dish is great to serve with pasta.
This is a dish I often make when I don't have a lot of time to prepare a meal. The recipe has been passed down from my mother.
1 lb. chicken tenders
8 oz. mushrooms, sliced
1/2 cup chicken broth
1/4 cup white wine or additional chicken broth
1 tsp. garlic
2 T. Lemon Juice
1/2 lemon, sliced
2 T. butter
1/4 cup flour
1/2 tsp. garlic salt
Butter or vegetable oil, for sauteing
Saute mushrooms in butter. Add garlic salt just before the end of cooking. Remove from pan and set aside.
Clean chicken. Coat the chicken in flour then saute it in a pan with butter and/or vegetable oil. When cooked, remove from pan, cover with foil and set aside.
Deglaze the pan with white wine and add garlic. Add chicken broth and lemon juice. Stir.
Return the chicken to the pan and cook an additional minute on each side. The flour on the chicken will thicken the sauce.
Remove chicken and add lemon slices.
Remove the pan from the heat and stir in butter, one tablespoon at a time.
Spread mushrooms over chicken and pour on sauce.
This is a wonderful recipe. I didn't have any mushrooms but it still was very good. Instead of veggies with it we had pasta with the chicken & sauce over. I did double sauce part though. We all enjoyed it!
