An easy gumbo to get those southern flavors without all the work or time.

2 green bell peppers
4 stalks of celery
1 medium onion
2 links of andoullie sausage
2 boneless skinless chicken breasts
1 pint chicken stock
2 tsp oil (I used grape seed oil, but any veg oil will do)
6 or 7 raw shrimp
1-2 tablespoons of flour
1 cup water
1 clove or so of garlic
hot sauce to taste
Dice the onion, celery, and bell peppers. In a large pot, "sweat" the onion, celery and peppers with the oil on medium heat. Dice the chicken and sausage, add to pot and stir in the flour and crushed garlic. Once the chicken is browned up a little bit, add the stock and water, and bring to a simmer. Let simmer for about 20 minutes, then add the shrimp. Let simmer for another 3-5 minutes then take off the heat. Add some hot sauce if you like. Serve over white rice and enjoy!
