Chicken Tostadas

This recipe is Mexican but I do not know why for some reason in Mexico they are called "Siberian style tostadas" anyway, we will not get in the trouble of finding out why right now... what matters is that they are delicious and I know you will love them! Once you do the cooking and chopping your kids will have lots of fun helping you put it all together!

4 chicken thighs (or 2 big chicken breasts)
2 hass avocados
2 red tomatoes (chopped in cubes)
1/2 tsp. salt
1 cup Mexican Style Cream (Crema Mexicana)
8 corn tostadas
16 pickled jalapeno slices (optional)

Preparation

1. Cook the chicken until is done (boiling it in water and some salt to taste), shred it and set aside.

2. Once the chicken is ready (never before because the avocados would get black) "puree" the avocados in a container until it is all "guacamole texture" add the tomatoes and the 1/2 tsp. of salt. 3. Spread the mixture of the avocados and tomatoes over the tostadas

4. Add the shredded chicken on top of the tostadas with the mixture.

5. Top each tostada with the "crema Mexicana" (and add more salt to taste if needed)

6. (optional and not for kids) add 1 or 2 slices of jalapeno peppers per tostada (or finely chop the jalapeno slices and add some on top)

Someone just told me on my blog that it seems they are called "Siberian" because of the cream on top... it makes them look like "Siberian mountains covered with snow"... I guess it makes sense... I do not know.
