1 lb cod fillets, skinned (almost any kind of fish or seafood can be used here)2 tbsp fish sauce2 red chillies, seeded and very finely chopped2 cloves garlic, crushed10 lime leaves, very finely chopped2 tbsp cilantro, chopped1 large egg1/4 cup all-purpose flour3 1/2 oz green beans, very finely slicedpeanut oil, for fryingchili dip, to serve
Preparation
roughly cut the cod fillets into bite-sized pieces
place the cod, fish sauce, chilies, garlic, lime leaves, cilantro, egg, and flour
process until finely chopped and transfer to a large mixing bowl
combine the green beans into the cod mixture
divide the mixture into small balls and flatten between your hands to form the cakes
heat a little oil in a preheated wok and fry the cakes on both sides until brown and crispy
arrange on a plate and serve hot with a chili dip
