Citrus Fish Fillets

Citrus flavors give these Orange Roughy fillets a light fresh flavor that everyone will love. This quick recipe is perfect for people who are watching their calories, but still want to enjoy a great tasting meal. Serve it up with a healthy salad, or some rice and vegetables. Refreshing!

4 (6 oz.) fillets of orange roughy
3 tablespoons flour
½ cup chicken broth
1 tablespoon butter
2 tablespoons lime juice
2 tablespoons lemon juice
1 tablespoon minced cilantro
1 teaspoon grated lime peel
¼ teaspoon ground cumin
½ teaspoon ground coriander
Salt and pepper to taste

Preparation

Wash fish and pat dry. Salt and pepper each fillet, then lightly coat each fillet in flour and set aside. Heat your butter in a large skillet. Once butter is melted, add fillets and cook about 3 minutes on each side. Fish should flake easily when done. Remove fish and cover to keep warm. Add the chicken broth, juices, herbs and seasonings to the skillet. Mix well and allow to cook on medium for about 3 minutes, stirring constantly. Once heated through, pour over fish fillets and serve. Yum!
