Cold Spinach Dip

One of the easiest appetizer recipes that I know of. My family always asks me to bring this when we are having gatherings for holidays, etc. My mother especially loves it. Serve it with chips, crackers, bread, or vegetables. Even better, slap it on top of a bagel, spread it on a sandwich or even a wrap. Enjoy!

add to shopping list Ingredients

1 bag frozen spinach, thawed and squeezed of excess water and then chop (I like to use fresh baby spinach when I have time, steam first)
1 pkg. Knorr brand Vegetable Mix
1 can (8 oz.) water chestnuts, chopped or diced (optional)
1 cup real mayo
16 oz. sour cream
4 green onions, chopped (optional)
1/2 red bell pepper, diced (optional)
½ cup grated carrot (optional)

Preparation

Mix ingredients together, until fully combined. Chill for two hours before serving. Now you are ready to serve!
