Comfort Egg Salad
Description
Not all egg salads are created equal. Not enough ingredients and you have egg on toast. Too much and you've got a soggy tasteless mess. This recipe gets it just right - crunchy, springy, sweet, tangy. Perfect for staying in on a rainy day in front of the fireplace.

6 Eggs, hard-boiled
3 slices of bacon
2 tablespoons chopped green onions
1/2 tablespoon white onion
1 1/2 teaspoon chopped fresh dill
4 tablespoons mayonnaise
Preparation
Chop the bacon and fry until crisp and golden. Drain cooked bacon on a plate lined with a paper towel.
Chop the hard boiled eggs into large chunks and place in a bowl. Add onion, dill, bacon and mayo to the bowl.
Sprinkle with salt and freshly cracked black pepper to taste. Mix to your desired level of egg size and consistency.

Egg salad is wonderful when it is seasoned just perfectly. It turns a sandwich into a creamy luxury.
I have been taking an egg salad sandwich with me to the golf course when I play!. The protein keeps me satisfied for four hours! I don't put onion in it because I don't want to offend my playing partners with onion breath, but your recipe sounds delicious. I put chopped black olive in mine!
