Cornish Hen stuffed with Couscous
Description
This is a typical Moroccan recipe, a stuffed Cornish hen with couscous, spiced with fresh ginger and Arabic gum.

2 cornish hen ( 1 pound each )
1 chopped onion
3 Garlic Cloves
3 Tbs vegetable oil, salt, pepper, ginger, turmeric
1 small bowl steamed couscous
2 Tbs raisins
3 Tbs grilled & crushed almonds
1/2 tsp cinnamon
3 Tbs butter
1 Tbs sugar
optional arabic gum
Preparation
Mix couscous, raisins, almonds, cinnamon, butter, sugar.
Stuff the Cornish hen with it, close with toothpick.
Sautee onion in oil, add garlic, ginger, salt, pepper, turmeric. Mix well, add Cornish hen, brown on each side for 20 min, add water and almonds. Cover, let cook 25 min.
