Couscous Stuffed Peppers

Delicious as a meatless main course, or use smaller peppers for an appetizer.

Preparation

Use red or yellow bell peppers. Cut off top similar as you would a pumpkin, and scoop out insides. Boil in water for five min. Prep couscous according to pkg. directions and stuff inside. Parsley and lemon work well as a garnish.

This is a good base recipe, but seems like it would be a bit bland. When I make stuffed peppers, I add canned diced tomatoes, squash, cilantro, and vegetarian sausage to the mix and bake them. There are millions of other combinations. I add a little shredded cheese during the last 5 mins in the oven for an added treat.
