Cream Biscuits

Description

Biscuits prepared using heavy cream and butter.

add to shopping list Ingredients

12 oz White Lily Flour OR (1/2 flour + 1/2 cake flour)
3/4 tsp salt
1 1/2 tbsp baking powder
1 1/2 tbsp Sugar
3 oz cold butter cut into 1 inch pieces
2 cups Heavy Cream
1 spoonful Milk for brushing the tops
1 sprinkle sugar on the tops

Preparation

Cream Biscuits

1) Sift dry ingredients to aerate and get rid of big pieces.
2) Cut butter into dry ingredients until it is the size of peas.
3) Blend in cream.
4) Finish by hand and gently knead a few times.
5) Shape by gently patting down onto clean surface.
6) 1/2" to 1/3" thick…cut 1 1/2" - 2" rounds turning upside down before placing onto parchment lined sheet pan.
7) Brush with milk and sugar. You can also brush butter on top.

Bake 450º 8 to 10 minutes. Serve hot.

Yields 12 to 14 biscuits.

Freezes nicely.
