Crispy Ginger Curry Chicken
Description
I just love this dish. It comes out perfectly every time, and only takes 15 minutes! Eliminate all prep time by doing all your chopping and mixing in the food processor.

1 tbs fresh ginger
1/2 bunch scallions
2 tsp curry powder or sweet curry powder
1 tbs Lime Juice
4 chicken thighs with skin
Salt And Pepper
Preparation
1. Pre-heat broiler and line baking pan with foil. Combine all ingredients in a food processor.
2. Lift up the skin of each thigh and pat ginger-curry-lime mixture generously underneath. Add salt and pepper on top of the skin.
3. Place chicken on pan skin-side down, and broil for 5 minutes. Flip skin-side up and broil another 10 minutes or until done.
