Crostini appetizer
Description
My husband is on dialysis and can't have salt and only a little cheese in his diet. Yet want interesting meals.

8 slices French bread cut on diagonal
Herbes de Provence
basil
fresh chives
Fontina cheese shredded on bread
2-3 cloves of garlic
Preparation
Skice bread on a diagonal about 1/2" thick or as preferred. Place together to facilitate adding ingredients. Sprinkle extra virgin olive oil over the bread. I rubbed bread a bit with the garlic then chopped and added to the top of the bread. Add whatever herbes you like. I liked herbes de provence, dried basil and fresh chives I cut from my tomato tree (it did better than tomatoes). Then I grated refrigerated Fontina cheese lightly over the top. I figured on at least 2 slices per person. I made a few extra and these can be added for as many people as you have. Easy to do. Can change to fresh herbes if you have them. Enjoy. Could add a tiny bit of Parmesan but it may overpower the Fontina and it adds more salt. I did not put any salt on this nor pepper. You can always add them yourself.
