Crunchy Nut Cookies
Description

2 cups splenda
2 eggs
1 Cup Oil
2 T vanilla sugar or vanilla extract
31/4 Cup finely ground almonds
1 cup potato starch
11/4 cup sugar-free chocolate chips
Preparation
Combine first three ingredients in mixer. Slowly add rest of the ingredients, leaving the potato starch for the last. Mix well, then freeze mixture for 10 minutes. Preheat the oven to 350, then form small balls and bake for 12-15 minutes. Enjoy!
