Cucumber and Roasted Peanut Salad
Description
This salad is very easy to make yet is so flavorful with roasted cumin and black mustard seeds that add nutty taste once you bite into one. Crunchy peanuts add a nice contrast to fresh and juicy cucumber that was marinated with lime juice and little bit of sugar for a short while.

2 large cucumbers, peeled and thinly sliced
1 medium red onion, thinly sliced
1/2 green chili pepper, halved, seeds removed and minced
1 teaspoon white sugar
1 Lime Juice
4 tablespoons roasted peanuts, coarsely crushed
1/2 teaspoon cumin seeds
1 teaspoon black mustard seeds
1 handful fresh coriander/cilantro, chopped
Salt to taste
1 teaspoon cooking oil
Preparation
In a large bowl, mix together cucumber, onion, green chili pepper, sugar and lime juice and let it marinate for a few minutes while you prepare the rest of the ingredients.
In a small pan, heat some oil and fry cumin and black mustard seeds until cumin seeds change their color and mustard seeds pop.
Pour roasted seeds over the cucumber, add crushed peanuts, chopped coriander and salt to taste.
Mix it well and serve immediately.

I have an affair with cucumbers. they are likened to green watermelons. the thought of roasted peanuts and cucumbers sounds new and original.
The girl and I tried this out last night and I fell in love with it! I think we added a little too much cilantro but other then that we found it to be a very tasty salad which isn't always easy to find. When we have sushi I always get a cucumber salad and I've been trying to find something like it but with a little more spice and fun and this was the answer! So tasty I sneaked out of bed at 2am and had another bite ;)
