Curry Roasted Chicken
Description
Growing up my mother would often use curry in her recipes. This is an easy version of one her recipes.
add to shopping list Ingredients
1 3-4 pound bought Roasted Chicken
8 tablespoons ketchup
4 tablespoons worcestershire sauce
4 teaspoons powdered or prepared mustard
1 cup boiling water
2-3 tablespoons canola oil
2 teaspoons mild curry
1 tablespoon flour
Preparation
Preheat the oven to 400 degrees F.
Place already roasted chicken in pan. Mix above ingredients and pour over chicken. Baste occasionally. Cook chicken for about 15 minutes.
Carve into pieces and serve with rice.
If you want to roast your own chicken, pour sauce over chicken and cook for about 90 minutes. Basting occasionally.

Wow this sounds divine! I never heard of currying a whole chicken, it's a great idea. And the tang offered by the ketchup offers an interesting flavor combo with the Indian spice mix.
