Easy Cheesy Noodles

Easy Cheesy Noodles is a memory from my childhood! My mom used elbow macaroni when she made this easy and yummy side dish. I now use “No Yolks” Noodles, but Egg Noodles can be substituted. We do not have leftovers when this family favorite side dish is served.

Preparation

1. Prepare Noodles according to directions on package.
2. Drain noodles and return noodles to pot.
3. Add Margarine/Butter and stir.
4. Add & Stir in about 8 oz. Low Fat Cottage Cheese, more if desired.
5. Cover. Heated noodles warms cottage cheese.
5. If needed before serving, turn heat on LOW and stir about 1 minute, until warm. Usually not necessary.
6. Serve & Enjoy!

My guy doesn't like cottage cheese alone but likes ricotta in lasagna,(sometimes substitute low-fat cottage cheese for half the ricotta and he can't tell the diff.)I wonder if he would notice the cottage cheese much in this recipe? After all it is cheese sort of, right? Hmmmm....

mxmomma05 - The Cottage Cheese here is not baked, but warmed, so difficult to guess if he would like it or not. Pasta, Butter/Margarine + Pepper are added. Sometimes bits of Chives, too. In my fam we all really like Cottage Cheese, so it's a hit here. Give it a try... :)
