Easy Cheesy Noodles
Description
Easy Cheesy Noodles is a memory from my childhood! My mom used elbow macaroni when she made this easy and yummy side dish. I now use “No Yolks” Noodles, but Egg Noodles can be substituted. We do not have leftovers when this family favorite side dish is served.
add to shopping list Ingredients
8 oz. “No Yolks” Extra Broad Noodles or Egg Noodles
16 oz. Low Fat Cottage Cheese (with chives is good)
2 TBS. Margarine/ Butter
Dash of Pepper
Preparation
1. Prepare Noodles according to directions on package.
2. Drain noodles and return noodles to pot.
3. Add Margarine/Butter and stir.
4. Add & Stir in about 8 oz. Low Fat Cottage Cheese, more if desired.
5. Cover. Heated noodles warms cottage cheese.
5. If needed before serving, turn heat on LOW and stir about 1 minute, until warm. Usually not necessary.
6. Serve & Enjoy!

Ooh, I'll have to try this. Cottage cheese and butter will combine beautifully with the egg noodles.
My guy doesn't like cottage cheese alone but likes ricotta in lasagna,(sometimes substitute low-fat cottage cheese for half the ricotta and he can't tell the diff.)I wonder if he would notice the cottage cheese much in this recipe? After all it is cheese sort of, right? Hmmmm....
