Easy Italian Antipasto

Antipasto is a very flexible and customizable Italian dish. My version does not include many ingredients and can be bought easily in just about any grocery store. I hope you take the recipe and run with it!

Preparation

1. Pour the chopped and pitted kalamata olives in a medium bowl.
2. Chop the garlic very fine and add to bowl.
3. Chop the artichokes and add to bowl.
4. Slice the roasted red pepper in strips and add to bowl.
5. Pour about 3-4 TBLE extra virgin olive oil over the mixture till nicely coated.
6. Stir well to mix the flavors and serve alone or with a salad.

You can use the variety olives too often found, but I personally love Kalamata olives. If your guests don't like artichoke hearts, don't use them. The dish still tastes great!
