Polenta is a recipe that comes from Northern Italy. Italians use it as a base for braised meats, or just as a side dish to any great meal. This simple recipe is a substitute for the slow cooked polenta that would be made in Italy. Most of us don't have 3 hours to make it, so this recipe is a great way to prepare light, fluffy polenta that has all the flavor, but is ready in 30 minutes.
1 cup medium-grain yellow polenta
4 cups water
4 tablespoons butter
1/3 cup Parmesan cheese
1 cup Mascarpone cheese
Salt and pepper to taste
Heat water in a large pot and bring to a boil. Season lightly with salt. Quickly add in your polenta and whisk well until fully incorporated. Reduce the heat to low and add your butter. Stir well. Cook the polenta on low for about 30 minutes, stir frequently.
Right at the end, stir in your Mascarpone and Parmesan cheeses and mix until fully combined. Remove from heat and allow to sit for just a minute. Now serve.
