This deliciously different casserole is perfect for weekday breakfast or Sunday brunch, and it’s so easy to put together. You can assemble it ahead and bake it the “day of”, or you can bake and freeze it, then reheat when you want to serve (please thaw overnight in the fridge).
28-30 saltine crackers, crumbled
2 cups sharp cheddar cheese, grated
6 eggs, slightly beaten
½ cup melted butter or margarine
Salt and pepper to taste
3 cups milk
Preheat over to 400 degrees. Spray an 8 x 12 casserole dish with nonstick cooking spray; put crumbled crackers in prepared dish. Combine remaining ingredients and pour over crackers. Bake at 400 degrees for 20 minutes.
