Egg Noodle Fiesta

Description

Pennsylvania Dutch egg noodles with a vegetable spin. A fresh side dish that will complement most menus. they are tasty and fun for the kids to eat.

Preparation

1) Boil water for the noodles and add salt after water boils
2) Using a large sauté pan heat oil & cook mushrooms & half-way through add tomatoes
3) Add noodles to boiling water and cook according to directions
4) Microwave Brussels sprouts
5) Add butter to pan and the cooked Brussels sprouts
6) Drain noodles and add to pan with vegetables.
7) Toss and sprinkle with salt & pepper
8) Serve while hot

Looks great! Would definitely drop the brussels sprouts as I'm not a big fan, but otherwise looks like a great dish for me to try. Thanks!

I suggest fresh baby leaf spinach (pre washed) and adding it to the recipe in the last minute of cooking. It only takes a second. If you don't care for spinach either, then add in corn, or asparagus, lightly cooked (3 minutes) and cut into bite-sized pieces. We're going for flavor and a balanced, inviting color combination.
