Financier cake, cheese mousse and elderberry flower gelatine.
125 gr flower
125 gr hazelnut powder
300 gr sugar powder
10 gr. baking powder
300 gr. white eggs
180 gr. butter (heat at 145 degrees)
400 gr. fresh creamy cheese (like philadelphia)
75 ml.. Cream Milk
8 gr. gelatine
125 gr. azucar
600 ml. whisked cream milk
200 ml. elderberry flower drink
FINANCIER CAKE
Heat the butter at 145 degrees.Mix all the ingredients together and add at the end the butter slowly.
Put the dough in a buttered and flowered mold and baked to 180 degrees around 20 minutes.
CHEESE MOUSSE
Heat the cream milk, add the gelatine and this with the cheese.
Cool down to 45 degrees.
Whisk the 600 ml. of cream milk; should be with chantilly texture.Mix the whisked cream milk with the cheese and gelatine..Finally put this over the financier cake when this is cold.Put in the fridge 2-3 hours.
ELDERBERRY FLOWER GELATINE
Heat the elderberry flower drink add the gelatine; cold down and finally put over the cheese mousse.Put in the fridge a few minutes and our delicius cake it´s ready.
It´s fantastic if you don´t like the sweety things because this cake is fresh, a litle bit acid and soft sweet flavour.
Had to look up elderberry. The appearance is like a blackened blueberry. I bet these would make very good mini mufins and a little buttercream icin on top would be scrumptious.

Your are right.The appearance is like blueberries but the taste is different.Oh i ´ll like to try these mini-muffins.
