Fettuccine with Tomato, Basil, and Fresh Mozzarella
Description
This fresh and simple pasta dish is perfect for a summer picnic or a light weekday lunch. Fresh ingredients are key, so make sure you stop by the market and find the best tomatoes, basil, and mozzarella you can. You will not believe how quick and delicious this recipe is. Change it up with some of your favorite veggies or herbs as well!

1 large package of cherry tomatoes, halved
2 cloves of garlic, minced
½ cup of fresh basil leaves, chopped coarsely
½ pound of fresh mozzarella, chopped into small pieces
½ cup extra virgin olive oil
2 tablespoons of red whine vinegar
Salt and pepper to taste
1 package of fettuccine (substitute any pasta you like)
Preparation
In a large bowl, combine the tomatoes, garlic, basil, mozzarella, oil, vinegar, and salt and pepper. Allow to sit, covered, for at least one hour. Cook your noodles according to the package directions, remove when still al dente (firm to the tooth). Drain noodles well, and reserve ½ cup of pasta water. In a large saucepan, pour your sauce in and add your pasta and pasta water. Mix well and serve. Simple as that!
