Fish The Kids Will Eat
Description
Our kids loved mexican food but no way would touch fish. One night I came up with this idea and there after had no trouble serving it once a month.

2 lbs. fresh cod, flounder or other whitefish
1 8 0z. chopped green chili's
1/2 choped fresh sweet onion
1 very large chopped fresh tomato
small pats of butter, salt & pepper
1/2 very juicy lemon
Preparation
Heat oven to 425 degrees. Lightly grease 9x13 dish. Cut fish inti 6 portions and place in dish.Squeeze juice over fish. Sprinkle with salt & pepper. In small bowl combine chili's, tomato and onion. spread over top of fish and bake uncovered, 12-14min. I serve this with refried beans, a green salad and buttered flour tortillas sprinkled with mexican cheese, rolled up, put in foil and heated in the oven with the fish. Avacado is a nice healthy addition to the salad.
