Fresh Pear Salad with Red Wine Vinaigrette
Description
I love fresh salads, but I love salads that include fresh fruit even more. Crisp pears give this salad a fresh taste and crunchy texture. You can whip this salad up in a flash for a simple side dish, or even pair it with some soup and you have an entire meal. Homemade red wine vinaigrette tops this delicious salad off. Yum!

1 bag spring lettuce mix
2 fresh pears, seeded and sliced
Crumbled Feta cheese
1 cup pecan halves
2 tablespoons Brown Sugar
2 tablespoons butter
½ cup Olive Oil
1 tablespoon fresh squeezed lemon juice
2 teaspoons Sugar
3 tablespoons Red Wine Vinegar
½ teaspoon salt
½ teaspoon dry mustard
1 clove garlic, minced
Preparation
In a bowl, add lemon juice, sugar, vinegar, salt, mustard, and garlic. Stir well with a whisk. Slowly drizzle in your olive oil while whisking. Once fully combined, cover and set aside. You can refrigerate if you like, but I like it room temperature.
In a saucepan, melt your butter and add in your brown sugar. Once melted, toss in your pecans. Coat with mixture and remove from heat. Spoon onto a plate to cool.
Toss together your lettuce mix with pear slices, cheese, and pecans. Top with dressing and serve.
