Lately, I have fallen in love with ORZO. I have been experimenting with it and today I came up with this delicious style that you will simply adore. Fried apple on top of orzo, drizzled with olive oil and topped with bacon.
1 Apple peeled, cored quartered and sliced
3 TBSP Sugar (to coat apple slices)
2 TBSP butter
1 CUP orzo
3 TSP salt
3 TBSP Olive Oil
1/5 LB bacon
1 Spoonful bacon drippings
Boil water and salt add ORZO. Cook for 9 minutes. Peel, core, quarter and slice the apple. Fry 1/5 pound of bacon until crispy. Reserve 1 wooden spoonful of bacon drippings. In a hot skillet add butter and shake apple slices in the sugar. Add to skillet and cook until reduced to about 1/2 cup. Drain ORZO but reserve 1/4 cup pasta water (in case you want to use some). Drizzle olive oil over ORZO, add salt and stir. Add cooked apples and wooden spoonful of bacon drippings. Stir. Dish up and add crushed bacon on top. AWESOME!
