Fried Marinated Turkey Breast

2 lbs. Turkey Breast – Sliced into thin strips
flour
Olive oil for frying
Marinade:
¾ cup cilantro- chopped
1 onion – finely chopped
1 cup chick peas
1 chili pepper – finely chopped
2 cloves garlic – crushed & chopped
6-8 tablespoons Olive Oil
juice of ½ lemon
Preparation
Roll the turkey in the flour, turning to cover them lightly all over. Then deep-fry in the hot oil until golden, turning them over once.
Drain on paper towels.
Mix the marinade ingredients and turn the turkey in this mixture.

/this is new. I have never fried turkey breast but it seems like an excellent change from chicken.
I’ve learned the sins of the south, deep fried turkey. An ‘oil change’ for one of those meals runs around $60. Fried turkey breast/strips, however, sounds like a great alternative. One question, however, why olive oil? Unless it’s an ultra refined or super light oil, it’s going to impart a flavor that may not be all that desirable. Besides, regular olive oil has a smoke point of around 320-325 degrees. That’s gonna leave a mark. :-D
