Fried Perch
Description
I wanted something my family and guest’s would enjoy, I played with this recipe until I got the taste and crispness I was looking for.

1-1/2 cup corn flour
2 tbsp Club house Lemon & Herbes
1 egg
1/4 tsp salt or to taste
3 tbsp malt vinegar
1 tbsp baking powder
1/2 bread crumbs
Preparation
Mix all ingredients in a large bowl except bread crumbs, pre-heat enough olive oil to cover ½ fish in a deep frying pan to medium heat, I put a couple drops of water in the pan, when they sizzle it’s ready.
Dip fish in mixture, roll in bread crumbs and fry until bottom is golden brown turn ounce cook until both sides look the same, remove and place on paper towels to absorb excise oil, I place them in a pre-heated over at 170 to keep them warm until I’m done cooking.
