Fruit and Yogurt Muffins

This is one of those recipes I come back to again and again. My family loves these muffins and frequently requests them for breakfast. The yogurt in the muffins gives them such a moist texture and a really rich flavor. One of my favorite things about them (aside from the fact that they're so delicious) is that they're so versatile. You can experiment with whatever fruit and yogurt combination you'd like!


2 cups all-purpose flour
1 cup white sugar
1 tsp baking soda
1 tsp baking powder
1 8-oz container yogurt, any flavor
1 egg
1 tsp vanilla extract
4 Tbsp melted butter
2 cups fresh or frozen fruit


1. Preheat oven to 350 degrees. Grease muffin cups or line with paper muffin liners.

2. Stir together flour, sugar, baking soda and baking powder. In a separate bowl, combine yogurt, egg, vanilla, butter and fruit. Stir mixtures together just until combined. The batter will be very, very thick. Add a tablespoon or two of milk to thin it out just enough to mix it, if needed. Scoop into prepared muffin cups.

3. Bake in preheated oven for 25 minutes, or until toothpick inserted near the center of a muffin comes out clean.
