Fruit Pizza

My Great Aunt Shannon makes this dessert that is chock full of fresh fruits. You can use any variety that you like, and you could even substitute chocolate cookie dough instead of sugar. This light, creamy dish would be the perfect ending to an outdoor barbecue. Nice and refreshing!

add to shopping list Ingredients

1 package of pre-made sugar cookie dough
¼ cup sugar
8 oz. Cream cheese
½ teaspoon vanilla
Fresh fruit (sliced strawberries, kiwi, oranges, blueberries, blackberries, etc.)

Preparation

Spread cookie dough into a pie dish or pizza pan, pat firmly. Cook according to package directions, probably about 14 minutes. Remove from oven and allow to cool completely. Soften the cream cheese in the microwave for a few seconds. Mix in sugar and vanilla. Spread over crust. Now top with all of your favorite fruits and serve. Mmm!

For sugar I use powdered sugar. You have to make sure that you put it in the fridge to thicken just a little. And for bites on the go I just make the individual sugar cookies and the icing then just before serving I cut up the fruit and place on top.
