Catholic Fundraiser Pickles

This recipe was given to me by a co-worker who tells me that a Catholic church in Florence, South Carolina makes them as a fundraiser. She brought a jar to a party at work and they were a big hit...surprisingly yummy.

add to shopping list Ingredients

1 gallon dill pickles (spears, slices, etc.)
4 lbs. sugar
3 oz. Tabasco sauce (be sure to use Tabasco!)
ΒΌ cup garlic powder

Preparation

Pour pickles in a colander and drain off all the juice. In a large bowl, combine drained pickles, sugar, Tabasco, and garlic powder. Put pickle mixture in a clean 1 gallon jar.
Every day for the next 5 days, flip jar over (top to bottom then reverse the next day). Put pickles in clean pint jars (makes 8 pints). Note: Because these are not "canned" (processed to seal the jars) I would keep them in the fridge to be on the safe side. I have not tried canning them yet to see if the heat affects the flavor.

That sure is a lot of pickles. I have never made them but this seems fairly straight-forward. I remember what a tiny drop of Tabasco was like on my 11 year old tongue. Hope the sugar masks the heat.
