Garbanzos is a Spanish dish, best discription is a chickpea stew, very popular as a Tapas or a main dish on the Canary Isles. Ideal when entertaining large numbers, the recipe is for 4, but can be increased easily.
As with most well flavoured foods, it can be and is best when prepared the day before.
200g Cooked Chickpeas
2 Chopped Onions
2 Chopped Tomatoes
3 Cloves Crushed Garlic
2 tsp Sweet Pimento Powder
2 tsp dried oregano
1 bay leaf
1 Meat Stock Cube
3 Medium Potatoes Cubed & Sauted
3-4 Pieces of Meat for Flavouring
Place chickpeas and meat into a saucepan.
Add just enough water to cover and bring to the boil.
Simmer gently.
In a seperate pan, fry all other ingredients except potatoes until well blended.
Add to the chickpeas and meat and simmer for 1/2 hour.
If praparing the day before stop at this stage.
On the day, bring to simmer over a medium heat.
Add Potatoes 20 minutes before serving.
This meal is normally served with freash crusty bread.
