Garden Gazpacho

Garden Gazpacho is a perfect meal for warm weather. I decided to make this when the temperature reached 105 and I did not want to turn on my oven or stove to make dinner. It is an extremely refreshing soup that is served chilled.

Preparation

To create this meal, chop all of the vegetables and place them in a large bowl. Add the liquid ingredients to the vegetables and stir several times until combined. Take half of the mixture and process in a food processor. Return the processed mixture to the bowl and stir until combined. Chill the soup.
I added several sprigs of cilantro for a garnish. This chilled soup also tastes wonderful with a dollop of goat cheese.

Would celery work as a garnish instead of cilantro? this is a beautiful soup and one that I hardly ever get to eat. I'll keep it in mind for next summer.

I used fresh tomatoes and pureed them instead of using tomato juice. Celery makes a great garnish. I make it up in batches, and serve with ice floating in it. It can also be frozen.
