Garlic Mashed Potatoes
Description
Mashed potatoes are one of the favorite side dishes ever created. You can serve them with almost anything, cover them with cheese, gravy, or just eat them plain. You can whip them up with skins on, or make the traditional skin off kind. There are so many ways to enjoy this simple side dish. This version is made with the skin on, to keep the nutrients, and lots of garlic and fresh herbs to give them tons of flavor!

3 ½ pounds russet potatoes
2 cups half and half
6 cloves of garlic, crushed
2 tablespoons salt
3 tablespoons butter
6 ounces grated Parmesan
Pepper to taste
Chopped fresh parsley
Preparation
Wash and dice your potatoes. Try to make them about the same size for even cooking. Bring to boil in a deep pot with a lid. Once boiling, reduce heat to keep them just at a rolling boil. Cook potatoes until they fall apart easily when you poke them with a fork. Drain well and set back into pot. Set aside.
In a saucepan, heat half and half with garlic. Simmer over medium heat for a few minutes. Stir often. Remove from heat. Mash your potatoes well. Now add this mixture in with your potatoes and mix. Stir in the Parmesan, butter, salt, pepper and herbs. Mix well. Allow to sit about 5 minutes to thicken. Now serve.
