Gazpacho is an ideal dish for hot summer days and plays an essential part in Andalusian cuisine.Peel cucumber Cut up the tomatoes, cucumber, pepper and garlic Put all vegetables with water, oil and vinegar into blender, process until totally liquid Add cumin and salt to taste put into fridge until very cold if you want, garnish with finely chopped green pepper, tomato, bread and onion

I make this (with this recipe) every time me or any of my flat mates get a wisdom tooth removed, or have to be on a liquid diet for some other reason. Sometimes I put something extra in it (celery, beans or other veggies), sometimes I leave something out. But never without bread, cumin or white wine vinegar!
