Grandma Nucci's Meatballs

The most delicious meatballs you will ever eat. With these babies, good cheese is everything. So toss your green plastic parmesan cylinder and buy some fresh grated romano, parmesean, or fontina!

Preparation

1. In a food processor, chop your bread and garlic. Add ground beef, parsley and cheese and process until thoroughly mixed.

2. Roll meatballs, and place on a large sautee pan with olive oil in it. Brown on all sides, then transfer meatballs into the sauce (which should be simmering in a pot on another burner) to cook the rest of the way.

Just like my grandma Abruzzo used to make - perfect! Only I don't think she used a food processor to chop bread and garlic. I think I recall her soaking bread in some milk, then squeezing out the excess milk, crumbling the bread with her fingers and adding to the ground beef, seasonings and cheese. None the less this recipe tasted the same to me.
