The most delicious meatballs you will ever eat. With these babies, good cheese is everything. So toss your green plastic parmesan cylinder and buy some fresh grated romano, parmesean, or fontina!

1 lb ground beef
2 pieces white bread
1/2 c parsley
1/2 c grated romano, parmesean or fontina cheese
2 cloves garlic
1. In a food processor, chop your bread and garlic. Add ground beef, parsley and cheese and process until thoroughly mixed.
2. Roll meatballs, and place on a large sautee pan with olive oil in it. Brown on all sides, then transfer meatballs into the sauce (which should be simmering in a pot on another burner) to cook the rest of the way.
PERFECT! The garlic is missing from the ingredients list (I found it on the blog page) but these are SO good - and part of the Week of Half Hour Meals feature from our blog here at HHM.
Added the garlic to the ingredients list... Wanted to mention that they freeze really well too if you make a big batch.
Have to say it again - making these tonight again and I LOVE THEM! These really are my go-to meatball now!
Just like my grandma Abruzzo used to make - perfect! Only I don't think she used a food processor to chop bread and garlic. I think I recall her soaking bread in some milk, then squeezing out the excess milk, crumbling the bread with her fingers and adding to the ground beef, seasonings and cheese. None the less this recipe tasted the same to me.
