Grandma's Chicken Soup

Chicken soup with an Italian flair. A updated version of my grandmother' s recipe.

1 3-4 lb Chicken
1 large Beef shank
1 large bag Organic baby carrots diced
1-2 bunches Orgaanic green onions
1 small package Organic fresh rosemary
1 small package Organic fresh tarragon
1 small package Organic fresh basil
3 dried bay leaves
Sea salt & pepper to taste
1 32 oz Organic whole tomatoes
1 lb Lean hamburger
1 bag Organic celery chopped
Preparation
Rinse chicken inside and out after removing packaged organs. Remove skin and organs to discard. Place the chicken and the next eight ingredients in a large pot. Fill pot with enough water to cover the ingredients then bring to a boil.
Season hamburger with salt, pepper and parsley then roll into small marble sized meatballs. Add meatballs and tomatoes to pot and lower heat to simmer. Cover for at least 60 minutes(the longer you cook it the better) then add celery and continue cooking until celery is tender. Cool overnight in the refrigerator and skim fat to discard. Debone chicken, discard herbs, tomatoes and bones. Heat and add pasta.
