Grated Beet and Anise Slaw
Description
wanted to have a beet and fennel salad. Normally I roast my beets before doing anything with them, but I really do enjoy them raw as well, so I thought I'd make a quick slaw out of them.

1 large beet
1 bulb anise/fennel
1/8 cup sherry vinegar
1 large pinch Kosher Salt
pinch nutmeg
1/2 teaspoon dried thyme (2 teaspoons fresh)
1 teaspoon dijon or stone-ground mustard
1/4 cup extra-virgin olive oil
Preparation
Grate the beets and fennel. Squeeze the grated fennel to remove much of the water in it. Fold together the beets and fennel.
Whisk together the vinegar, salt, thyme, nutmeg and mustard. Drizzle in the olive oil, whisking to combine. Fold this dressing into the beet-fennel mixture. Makes about 3 cups.
