Gravy-Baked Pork Chops
Description
I love anything with gravy and the mushroom gravy in this recipe is soooooo good! This is another favorite from my childhood and one that my mother made for us frequently because we asked for it so often. I like it served with buttered egg noodles or rice and green beans or mixed vegetables.

4 Pork Chops (your preference of boneless or bone-in)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon shortening or vegetable oil
1 (10 3/4 oz.) can cream of mushroom soup (cream of chicken or celery work well too)
1 (5 oz.) can evaporated milk
1/3 cup water
Preparation
Preheat oven to 350 degrees. Sprinkle chops with salt and pepper. Heat shortening or oil in 10 inch skillet; brown chops quickly in hot shortening (do not overcook or they will be dry). Mix soup, milk and water in bowl, using wire wisk to remove lumps. Grease a 2 qt. baking dish with nonstick cooking spray or additional shortening; place browned chops in baking dish. Pour soup mixture over and around chops. Bake at 350 for 25 minutes or until chops are tender. Note: Thin chops will take less time to cook.
