Greek food can be time-consuming to make at home, but not in this recipe! All the flavors of gyros are combined in a "taco" for a delicious and simple fusion dish. The sauce, made with sour cream and cucumber, calls to mind tzatziki sauce. These are definitely a favorite in my family!

1. To make the sauce, squeeze as much liquid out of the cucumber as you can. Combine sour cream, cucumber, and vinegar. Add salt and pepper to taste. Refrigerate until ready to use.

2. In a large skillet, cook the beef over medium heat until no longer pink; drain any excess fat and return to the pan. Stir in the tomatoes, Greek seasoning, garlic and pepper. Bring to a boil, then reduce heat and simmer for 8 to 10 minutes.

3. Add spinach; cook and stir for 2 to 3 minutes or until spinach is wilted. Add a splash of vinegar.

4. Spoon some of the beef mixture into each flour tortilla. Top with sauce and desired toppings.

I can't wait to try this! My kids don't like regular tacos, but these may work! I love all of the Greek flavors involved, and I'm a sucker for good Tzatziki sauce! Thanks for sharing!
