Grilled Chicken Soft Tacos with Collards

6oz Chicken Breast
6 cups collard greens
1 cup sliced mushrooms
1/2 cup Sodium free chicken brooth
1/2 can Rotal tomatoes
3 cloves of garlic
1/8 cup Red Onions chopped
6 Corn Tortillas
pepper to taste
Salt to taste
Olive Oil
Peppers of choice
Preparation
lightly coat Forman Grill with olive oil, or you and rub chicken breast with olive Oil, and then season with Salt, Pepper and Garlic,
As chicken is cooking, get a large pot and heat olive oil, (2 to 3 Tbs.) enough to coat bottom of pan, drop in chopped onions and peppers , cook til tender. Add in mushroom, cook slightly( don't over cook), add chopped garlic, stir around and then add all the greens, (they are going to cook down a lot). Add chicken broth, At this time you can add the tomatoes is you like or leave til the end like I do. Keep moving the greens for a few minutes until well coated, and ingredends well mixed. Cover and lower and let simmer for 20 to 30 minutes until tender and brooth is totally asorbed.
Take chicken off grill, place corn tortiallas, on grill, do not cean grill or remove cooked on chicken, close and it will take only a couple of minutes to be soft, flip them and leave just a minute longer. Shred the chicken, heat rotal tomatoes in micro wave, Place chicken on corn tortiallas, add collard greens and then tomato mixture. If you like you could add cheese and sour cream, But without is lower calorie.
