If you've been to Jamaica (and if you haven't, you should go!) you're likely familiar with this classic dish that you'll crave as much as we do. This is an easy recipe for grilled jerk chicken that you'll want to make over and over again. Enjoy, mon!

4 pieces Chicken (bone-in breasts, legs or thighs)
6oz Grace jerk marinade
1 clove garlic
1/2 Red onion (chopped fine)
1 1/2 inch section fresh ginger

Preparation

General tips: Jerk chicken is a real easy dish that has a few simple steps in order to produce the perfect end result. First, you can use any type of chicken piece for this recipe -- however, you'll find the best results with skin-on bone-in breasts or legs. Keep the skin on -- it'll dramatically enhance the dish. Second, you'll want to find a good quality jerk marinade at your local supermarket. We can buy Grace products at nearly all of our local grocery stores here in Ontario, Canada -- I'd highly recommend using the 12oz Grace jerk marinade. If you can't find it locally, you can buy it online via this link: http://www.buygracefoods.com/site/product.cfm?id=grace_jerk_marinade_12oz. We usually add some fresh ingredients to our marinade to kick it up a notch.

Marinating your chicken pieces for at least a day is highly recommended.

Marinade steps:

- Place your chicken pieces in a large bowl and add your marinade and fresh ingredients.
- Cover with tinfoil or plastic wrap and store in the refrigerator until you are ready to grill.

Cooking steps (time adjusted for bone-in breasts -- decrease time for smaller pieces such as legs):

- Before you do anything, crack open a nice bottle of Red Stripe to enjoy during the cooking process. (You could keep another one or two on ice for the duration! :))
- Prepare your grill by pre-heating to medium/high
- Place the chicken pieces on the top rack. For your bone-in breasts, place the bone side down on the rack
- Allow the chicken to cook for about 20 minutes, until you see gradual browning on the outside of the pieces. You'll want to move them to the lower rack at this point, allowing them to heat further but never to burn. You'll want to pay close attention to them at this point -- Most mistakes will happen here! :)
- After about 30 minutes, ensure that the pieces are cooked properly by cutting into the largest breast piece on the grill. You don't want to over-cook this dish, so checking regularly will be time well spent.

You could also serve this with a BBQ sauce of your choice. We sometimes mix our favorite sauce with orange/ginger stir-fry sauce to complement the jerk seasoning. We would generally serve the chicken with rice & beans, just like they do at the jerk huts on Negril Beach. Enjoy!
