Grilled Lemon Thyme Chicken

This is a high protein, clean, yummy Grilled Chicken. The flavor is light and delicious and the yellow color from the tumeric is beautiful. Versatile dish that can be used to add to many recipes (sandwiches, salads, sauces, burritos, etc...)

2 lbs Boneless, Skinless Organic Chicken Breast
1/4 cup Garlic Olive Oil (Trader Joe's has a great one, most markets carry it these days)
1/2 cup Lemon Juice (You can juice a few lemons if you have them handy, I usually reach for my bottle of Santa Cruz Organic!)
salt and pepper to taste
1 Tbs Dried Thyme or a small Handful Fresh Thyme
2 Tsp Tumeric (Yes it will make your hands turn yellow, you can wear gloves if you wish.
Chopped Cilantro or or Italian Parsley for garnish

Preparation

Trim any fat and clean Chicken
Put Chicken in bowl with Garlic Oil, Lemon Juice, Salt, Pepper, Thyme and Tumeric, combine all. (If you have time, do this in the morning and marinate all day in the fridge. If this is last minute, try to give Chicken about an hour in the marinade)
Pre heat Grill, Medium High Heat.
Grill Chicken about 5 minutes per side until inside is cooked through.
Plate and garnish with chopped Cilantro or Parsley

This looks awesome! I'd drop the cilantro as my girlfriend hates it but otherwise really looking forward to trying this dish.
